I did not find how to turn off the text auto-fit in Keynote (I am using version 9)

Do you mean; shrink text to fit?
Select the text box then go to Inspector > Format > Text and deselect shrink text to fit option.

your answer shows that I actually have a more subtle problem.
Inspector>Text>Format is exactly where I expected to find the option setting. (I am a long term user of Keynote). But yesterday, it was simply not there....( and I did try with and without selecting text in a text box). Today the option is back.
And this occurred a day after I spend 2 hours with AppleCare support due to a Keynote corrupted file that created synch issue on iCloud.
But today everything went back to normal. I keep my fingers crossed.
