Twice now, when I left a store and got in my car and started heading towards home, Apple Maps popped up a notification of the distance to my home address. Without me doing anything. This never happened before. It's kinda eerie how it decides I am heading home and does this. But mostly annoying as if I want help from Maps or Google Maps or Waze, I will open the app and ask. Thanks!

I think you will find map suggestions are part of Siri suggestions. Check through the rather long list of Siri settings.
It is doing that based on your location and where you have gone at similar times of the day. It does the same for me around work time on my day off, and to my favorite restaurant where I go every Sunday morning after church. Nothing to concern yourself with regarding privacy. If your phone is also connected to Bluetooth in your car, you would see a parked car location update if you have that turned on in Settings.
Is there anyway to stop it from doing that, short of removing the app from my iPhone? Where would I find this setting about the Parked Car.
The parked car is in Settings>Maps. As far as the other, I've not seen a spot for turning that off. Is Maps actually opening full screen, or are you just seeing a popup notification about time to a certain location?
It is just a popup notification about time to a certain location. And it shows my home address except the house number is one off. Ours is 9308 and it tells me 9307 (which is the house across the street).
The number is going to be based on map data location, not necessarily your post office address. GIS information will divide a block differently than the post office does, so numbers can rarely match, unless you report the problem in Apple Maps to correct it.
