How can I tell if my text are being forwarded?

You can view Settings>Messages then look for the Text Message Forwarding section to see if your phone is forwarding the text messages to any other devices signed into your iMessage account

Family Sharing doesn't forward texts. As long as you're not sharing an Apple ID with someone, the only way they will be getting your text messages is if you explicitly share them one by one.
Do you mean if they are being forwarded to another one of your devices? or if someone that you sent it to is forwarding it onto someone else?
