I want to know if there is a way to stop deleting events in the diary with just one click. We have accidentally deleted appointments too easily. Is there a way to ensure you are asked an "are you sure?" message before it actually deletes?

There isn't an option to set up what you want in the correct version of Calendar.
If you want to, you can send Apple feedback. They won't answer, but at least will know there is a problem or a suggestion for change. If enough people send feedback, it may get the problem/suggested change solved sooner.
