how can I know the color of my sealed iPhone XS max, before I open it?
the box says space gray and the emei check says silver

Where are you doing this IMEI check?
I'd go with what the box says. While working for a U.S. carrier, I was involved in selling iPhone for years and the only time I recall seeing a mismatch with the color on the box and what was inside it was with a couple of iPhone 5Cs.
And, if you bought the phone from Apple, you have 14 days to return it if it's wrong anyway.
