If someone stole my iPhone and knows the password to take it off of the lost mode when I turn it on, is there anyway to change my password on that phone to where they cannot use it anymore?

If you are referring to the passcode to unlock the iPhone, no you cannot change it remotely.
Yes, it will erase it all.
If someone stole your iPhone and knows your password, I say kiss it off. All they have to do is restore it. Once they do that there is nothing you can do after that.
What happens if I hit the erase iPhone? Will it just erase everything on there? As in pictures and apps, stuff like that?
