Why is the text in a fillable document turning sideways

This question pertains to MacOS Mojave 10.14.6 on a 2018 Mac Mini.

I am trying to fill out an editable form using Preview. When I am done filling out the text in each field, the text comes out rotated 90 degrees to the right. I don't see any options in the Preview menu bar which allows me to rotate the text to the correct orientation.

I'm scratching my head - maybe I'm overlooking the simple fix?
