Cannot open iTunes Store

I cannot connect to iTunes Store. Instead it’s asking me to open iTunes U. My IOS has just been updated and the time/date is correct on the device...

What country are you in, and therefore what country is on the account ? Media (music, films etc.) isn't available from iTunes in all countries, in those countries where it isn't available you will see the iTunes U screen in the iTunes Store app.
