Hi! This is my first time having an IPhone device. I just bought it
(6S Plus). I am just curious because I didn't see any charging indicator on screen while it's being turned off. But when I turn it on, it shows that it's charging. How can I identify if my device is already fully charged when turned off ?

You can't. And you do not need to turn it off.
Lock it with the Side button and everything is gonna be okay with the battery. You can leave your iPhone on a charger overnight as long as you are using the authentic charging cable and power adapter.
This is an authentic one.
Sometimes people do buy cheap ones and they could destroy the battery and even the phone.

But why does my usb connector doesn't have that made for applein Calif, made in vietnam or china , something like that. I only have it in my adapter. Does it means it's fake? I attached the photos.
