It would be really helpful if there was a way to search the AppStore and get a list of apps that support Siri and CarPlay. I find it really hit or miss. For example when I searched today CarPlay Webex doesn’t show up but they have in their description that they now support CarPlay.

There is no way that I am aware of.
All apps are not available on all countries. There are country / region feature specific apps. There are apps which are paid and there are many other apps which may have in-app purchases. There are also Apps that have subscriptions.
So it is completely an individual choice and you have to make that search and choice yourself.
There has got to be a way to search and get all CarPlay apps for the respective country.
