So I accidentally restored my iPhone to factory settings. Basically it's now a new iPhone. When I tried to use restore via my iTunes backup, iTunes does not list the old backup (which was made just a day ago, same iOS version). I can only use a new backup which is worthless since the iPhone is now empty. I know the file is in there since I can find the physical folder on my File Explorer

Unless you have snapshot of the ..\MobileSync\Backup folder taken some point between when the last backup that you want to recover was made and before it was overwritten then it cannot be restored. See Archive iPhone backup in Windows - Apple Community for some background on how iOS backups work, and how you might make security copies in the future. There is a very slim possibility that you could have shadow copies enabled such that you might be able to restore a previous version of the folder. As I understand it, it sounds like you see an older backup in File Explorer, but it's not showing as an option to restore that backup. If you click Preferences > Devices in iTunes, do you see the backup in question?
It may be possible to restore from an iCloud backup if you have one available. Here's how you can Locate backups of your iPhone, iPad, and iPod touch. As another possibility, if you've been syncing content to iCloud, you may be able to recover that content by signing in with the same Apple ID used before, and then switching iCloud services on: Sign in with your Apple ID

No I do not see the old backup. I guess this means it's possibly corrupted. I only backup certain things on iCloud, only my PC contains the full backup
