Once you have ended that Preview session, the text is embedded and cannot be edited. I annotate a lot of images in Preview but I make a copy of the original image first and only annotate the copy.

Editing pdf with Preview I've pasted a picture on a pdf on Preview. But even after saving it, if I open the document again the picture is still editable and removable. Is there a way to "fix it" and make it uneditable? Thanks

An alternative is saving the image as a PDF first then you can annotate and make any changes you like.
