I see articles indicating we can use the physical card in stores that don't offer Apple Pay, but don't see details on how this works.
What is the process? Typically terminals ask for a PIN, but there isn't one for the card that I can find.

No - it just acts as a regular physical credit card. The CCV number can be found in the Wallet app on the associated iPhone along with the actual full credit card number. But since it is not a debit card, a machine in a store/restaurant should not require either a pin or the CCV (3 digit security code number).
I have never used a PIN with any credit card. To the best of my knowledge, they're used only with debit cards.

If it's the CCV, you need your iPhone with you. Go into Wallet, tap on the Apple Card, then tap on the 3-dot icon at the top right. Go to Card Information where Apple refers to it as a "Security Code."
Yes most online retailers do require it because they can't "see" if you actually have the card with you. Retail stores are presented with the physical card so they never ask for the code at least in my experience.

First, my error. It's correctly CVV.
I have had rare instances of brick & mortar retailers requiring the CVV when accepting a credit card. Most online retailers do require it.
