No, you cannot downgrade AirPlay. You may find that if you redirect the output of your Mac rather than using AirPlay from within iTunes that you can use the iTunes equalizer.

I've tried on my system. The iTunes equalizer is disabled (it's ignored) when the music is sent to HomePod. It's enabled and working when the music is sent to an AirPlay receiver (first version).
I get your point. Try to send a feedback to Apple:
Use the Mac's volume control output switcher rather than the AirPlay icon in iTunes.

Are you using AirPlay 2 protocol (sending to HomePod, Apple TV...)? As far as I know the equalizer doesn't work on AirPlay 2.

iTunes equalizer does work even with AirPlay 2 when it's invoked by the main control volume.
Yes, actually sending to 2 devices (HomePod and Airport Extreme earphone conect to home stereo) via Airplay 2. The equalizer capability always worked for home stereo connection until I upgraded to Yosemite.
Apple: are you planning to put a fix in place? Us audiophiles would be happy I suspect - even though you only provide low quality digital files, the equalizer helps a bit ...
Thanks for the advice! I am happy to lose the HomePod. Disconnecting it from the network does not seem to enable the equalizer for the AirPlay receiver. Is there a way to downgrade from Airplay 2 to the first version?
Thanks for this advice ... but I'm not sure about what you mean 'redirect'. Do you mean connect the computer directly to the receiver using a USB D to A converter? That is how I have in in my office, but at home I am running from a laptop that cannot be easily hard connected as I move around with it.

No, Airplay 2 is part of the last iOS/macOS versions and firmware version of your Airport Express (you mentioned Airport Extreme; I think you meant Airport Express).
