New apple watch repeated pairs and then get message "failed to pair

Any idea. I had an Apple Watch series one which busted. The 3 is the replacement. Reset my iPhone X which has iOS 12.4 software. Shut both off but it will pair and then I immediately get an error message. Any ideas?

Iphone has latest SW but trying to pair watch fails as it says Iphone is out of date. I just paid over $350 to have my apple watch repaired (and they sent me another one for that price), but it will not let me pair my Iphone 6 plus. The watch is a series 4. I have rebooted both the watch and the phone several times. It starts the pairing but after entering the code and starts processing it comes up with the error message (and a link to update the phone OS). This really is killing me as the old watch paired fine; and now I get this surprise bill for repair and the new watch does not even work. Very unhappy with apple products lately.

Apple Watch cannot update or pair Apple Watch series 3 has been factory reset and it will not pair to any iPhone. Can start to pair manually or through the camera animation, once it verifies the software it says it must update to continue pairing. Trying to update gives the below error consistently. As stated before the watch is factory reset, cannot be used unless it’s paired; phone is fully updated and connected to a solid Wifi source. Both devices are fully charged. Have tried hard resetting the phone (tried multiple phones and reset them all), resetting the phones network settings, on and off WiFi, deleting and reinstalling the Watch app, etc. We have tried literally everything all the forums have suggested. Posting in hopes there has been something we missed

Make sure your Watch is updated to OS 5.3. If so, read this....https://support.apple.com/en-us/HT205025
