What can I do when my old phone had iOS 12.3.1 and my new phone iOS 10.3.3?

When I want to keep the backup?

Your "new" iphone MUST run at least iOS 12.3.1 (or later).

Update it:--> Update your iPhone, iPad, or iPod touch - Apple Support
