I cannot update or create a new backup to my computer; how can I update the backup on my phone without it trying to restore my phone?

If your iPhone is showing as disabled or locked in restore mode, then data not already backed up or hosted elsewhere (in iCloud or otherwise) is gone. Unfortunately for these cases, the backups have to happen before the problem.
