Pages Equation editor does not permit automatic equation numbering because it uses a minimalistic [La}TeX translator that does not accept packages (e.g. \usepackage{amsmath}) or much of what you can do in MacTeX 2019. See this Apple article on what is supported, and to get the blahtex translator PDF.
