Health APP Data HOG

I have over 2GB of data on health app. I tried the online instructions to dump it several times. I was just at a genius bar where 3 (THREE) people there were unable to dump it. This included complete resets. So, any OTHER hints here?

AND as Im comfortable not knowing how many steps I walked 2 years ago, why can't I just DELETE the APP? That appears to be impossible as well.

How Health handles data from multiple sources (Watch the GIF below)

The Health app takes similar data from different sources, like steps recorded from your iPhone and activity from your Apple Watch, and organizes it based on where it comes from. By default, Health prioritizes data in this order:

  1. Health data that you enter manually.
  2. Data from your iPhone, iPod touch, and Apple Watch.
  3. Data from apps and Bluetooth devices.

When you add a new data source, it appears above all other apps and devices that contribute data for steps in Health. You can change the order of sources at any time
