I’ve an iphone Xmax since 7 months , and now the battery capacity shows me a 99%. Although, I’m using it very normal .... Is it normal to start degrading at this time ? And i wanna know the perfect way to charge the iphone ? ( I charge it when it goes down to 20% and keep it till it’s fully charged )

This is absolutely normal. You can't prevent a chemical age of the battery.
The best way to charge it is to never allow it to drop to 0%, use authentic or certified accessories. You can also leave your iPhone on a charge over night.
Thank you very much , its was really helpful to find the appropriate answer but there is still another question ... what does apple means of this sentence ( Lower capacity may result in fewer usage between charges ) I really didn’t get it 😅😅
In other words, when your iPhone loses a lot of the battery's capacity, it will live shorter on a single charge.
