My sons friend gave him an IPHONE 7 and we started phone connected to WiFi and we got a code saying an update is required to activate your phone but it didn’t give me any other options but to shut down. How do I move forward to update from this??

You can try updating it via iTunes, by connecting it to the Mac or PC.
Have you tried using iTunes? Connect your phone to PC or Mac and update it before activating. You also can try using the DFU mode - it'll most likely work (if there are no hardware problems)
