Which models of the Series 5 have Sapphire Glass Display?
Sapphire Glass Display was for Stainless Steel and up on Series 0-4, but the Series 5 vs. Series 3 comparison page (https://www.apple.com/uk/watch/compare) doesn't mention the display protection.

Yes, I went to the Apple Store and confirmed it. Select one and scroll down to the specification.
Go look at the specs in the store pages. It clears it up.

Not so fast. I’ve been wondering the same thing. The specs on Apple’s site list sapphire for the BACK. No mention of the display.
