Which models of the Series 5 have Sapphire Glass Display?
Sapphire Glass Display was for Stainless Steel and up on Series 0-4, but the Series 5 vs. Series 3 comparison page (https://www.apple.com/uk/watch/compare) doesn't mention the display protection.

The Stainless Steel, Edition and Hermes have Sapphire crystals, the Aluminum has ion-X
Has anyone found anything published that can confirm this?

Not so fast. I’ve been wondering the same thing. The specs on Apple’s site list sapphire for the BACK. No mention of the display.
