My niece has her own apple music account and I want her to cancel hers and join my apple music account. Will she lose her music?

If you cancel it manually yes all music will be gone. Do not manually cancel it.
An Individual Music subscription cannot be shared.
If you have a Family Membership, then invite her to your Family Group, and when she accepts, her subscription will be automatically cancelled and her music will remain unaffected as it is an immediate transfer.
