Normally I would get a new blank document when opening Pages. Now a list comes up and I have to click new Document. How do I get this changed back to opening a blank page. (Same thing is happening in Numbers and Intaglio.)

Change the option at Pages > Preferences > General > For New Documents.
or if you are referring to the iCloud Drive option, turn off Apple menu > System Preferences > iCloud > iCloud Drive - Options > Pages
