Apple Watch Series 2 not updating to WatchOS 6

I’m trying to update my Apple Watch (Series 2) to WatchOS 6 but the software update option is telling me that I’m up to date with WatchOS 5.3.1 and doesn’t give me an option to download the new software.

I’ve tried shutting down, unpairing and resetting with no success.

Are there any known issues and does anyone have any suggestions to resolve this?
