how do i backup both on the one mac and be able to distinguish his from mind when i get ready to put on a new iPad?

As I recall it will list the backups separately, but create different accounts on the Mac...

Open System Preferences>Users & Groups, unlock the lock, click on the little plus icon, make a new admin account, log out & into the new account.
