I am giving my phone to my granddaughter. How do I remove my Apple ID/user name on the phone and have hers become the main one. My son already starting Family Sharing from his phone and created her Apple ID that way; how do we connect that to my former phone

It is possible to do only what you mention, but it is better to reset it entirely for her use:

Follow the steps in the article below. That will make the phone as new and she can use the setup to add her ID.
