Usually this means you don't have the Compass app on your iPhone. Open the app store and download and install the Compass app on your paired iPhone.

Once you have the compass app on your iPhone, it should show up on your watch.

If not, restart both devices and see if the compass app now shows up on your Apple Watch Series 5!
