how can I use the straight talk SIM card with an iPhone pro? Only need/want one phone number.

Well we can't answer the question for Straight Talk. They should know whether their network supports iPhone and whether their sim will work in iPhone.
Straight talk sim worked fine on previous versions of iPhone.
Then try to put it in your 11 Pro.
