Hello RobbonFrenzy and welcome to Apple Support Communities.
I see you have a question about the new Night Mode feature on the iPhone 11 and 11 Pro models.
At this time, it is not possible to defeat this mode globally. If you would like to leave feedback about that, you can do so here:
Using the drop-down menu on that page, choose Feature Request.
Cheers.

Definitely fill out a bug report, more likely for apple to see it.
It is driving me up the wall and seems to be getting worse! I turn off night mode and turn in Live Photo for gig photography and after 1 photo it defaults back to night mode, then the camera freezes altogether and I have to close down the application and re-open. Even photos that I’m taking which appear to be Live Photo’s when I press the shutter, on review, are actually blurred night mode photos. I was trying to take Live Photo’s tonight and only about a quarter are actually live. The rest are useless, blurred night mode shots. It’s the worst I’ve ever felt about new iPhone functionality. Please make a setting to permanently disable/enable!!
This feature has ruined my ability to take Live Photos, it’s inexcusable. It is definitely an oversight or a bug because setting Live Photos to “On” instead of “Auto” still loses out over the un-disable-able “Night Mode”
I even have the Preserve Creative Controls setting enabled but Live Photos will not stay on. You have to admit this is a problem. It doesn’t even stay on after you take a single photo. Immediately back off with night mode back on
This has already led to me losing memories with friends, loved ones, and pets. Live Photos are more important to many customers and there is currently no way to have the functionality I had with my last few iPhones.
Please add a permanent on/off switch for the night camera mode. It has ruined my Live Photo photography sessions multiple times since I purchased my iPhone 11 pro Max.
I suggest everyone reports it as a bug, it’s an absolute nightmare.
It's very frustrating. I held on to my XS max even though I got the 11 pro max just to compare them, and the apps on my XS max freeze and crash a lot less if at all. I don't think I've ever had the camera app crash on my old phone not one time. But on the 11 pro max almost every time i take burst photos it crashes. I might just switch back to my old one if they don't fix it. Also the new screen they used is trash and had scratches all over it with in a week of light use.
I really wish Apple would let us set night mode off by default ‘cos this “feature” is ruining my iphoneography experience and I’m beginning to hate my iPhone 11pro max because of it. My old iPhone X was already handling low light shots pretty well, and a bit of clever post editing could make any under-exposed shot look pretty good. This new night mode drives up exposure unnecessarily and too much. Indoor shots at night at home used to be no problem at all with my old iPhone, but now my iphone 11promax insists that it should be BRIGHTER, forcing night mode on every single time. I have to manually turn it off for every single shot! When I just got the phone without knowing I have to do that for every shot or I’ll be taking 3secs long exposure shots, I was taking a group photo in an indoor setting with ample warm lighting and everyone got confused/impatient/annoyed and it was such an embarrassing experience! I hate that Apple thinks they know better and that they know us consumers better than we do ourselves and decided not to give the simple option of turning it off as default or at least letting it stay off. This is major arrogance and oversight in their design. I’m a professional photographer and I’m not even that impressed by the results of night mode photos which look a tad too HDR for my taste, so I only plan to use it only if absolutely necessary in really dark conditions. But now with this (plus some other annoying feature like the cropping/ratio) I’m not even that keen to use my iPhone camera anymore.
This is getting ridiculous. I was taking a picture indoors in the day and my stupid iPhone decided to turn on night mode again. A lot of my photos shot in the day these days turn out mostly blur because night mode (hence long exposure) is turned on when I’m not expecting it to.
i wish there’s somewhere I could go to scream at someone over at Apple for this stupid feature.
I just found this looking for answers on how to turn the night mode off. THE most frustrating thing ever, having to do this over and over and it ruins pictures, delays 'quick' shots, etc. Well - y'all know!
I just reported it as a bug, too. I sincerely hope they do an update asap and change this. Won't hold my breath, but one can hope!
I reported it right after my original post here. Hopefully more will and they’ll address it!
Let us set night mode off by default!
I'm starting to hate my iPhone 11.
Commenting to agree that night mode should disable permanently the same way flash is disabled permanently.
