When I open files in the preview app, I can move the file to a recently used folder, but it only shows 5 recent folders.
How can I increase this number (say to 10)?
System Preferences > General > Recent Items. Change the number, quit Preview and relaunch.
If you mean "Recent Places" in the "Move to…" menu, I don't think that can be changed. You just have to select "Other…".
Than I need a patch... Just kidding ;-)
Well, if it is hard coded it cannot be changed. I looked at all the plist files I could find in the system and didn't see anything which might help.

Yes this is what I mean and there is no option visible in the GUI. But there might be some more technical way of doing it, like editing some plist file.
Or it's hard coded in the app and can't be changed.
