Up until Catalina, I could play audiobooks through my Apple TV by going to "computers" and then there was an audiobook heading. Now that's gone and my audiobooks are moved to Books and it sucks. I guess I already know the answer to my question but maybe I'm wrong. Can I still play audiobook through my Apple TV somehow? Because it's why I bought the Apple TV in the first place...

What about just streaming from your iPhone to the Apple TV?
I've never used Apple TV, but I'm assuming it will play music -- mp3 files?
If so, then you need to convert your audiobooks to mp3 format using the OpenAudible app, and then import your files to Music instead of to Books. Then you can create playlists and edit metadata and so on just the same as you used to do in iTunes, and that ought to play on Apple TV as well.
