Symbolic link to documents and desktop folder gets reset after reboot on macOS 10.15 Catalina

I use OneDrive for Business to sync my files. To achieve somewhat similar to Windows' folder redirection I used to delete the original "documents" and "desktop" folders and create symbolic links to their equivalent in my OneDrive folder.

Example: sudo ln -s /Users/xyz/OneDrive/Documents /Users/xyz/Documents

With Catalina, these two symlinks are getting lost after each reboot.

What do I have to change or make different to get this to work again?

what's the latest? I was getting ready to create symlinks pointing to Dropbox for Desktop, Documents & Downloads.

That is why I said "I figured out the cause- but not the solution" as disabling iCloud Drive is not a solution rather it is extinguishing one problem but creating another.
