I can't seem to find any language showing that a late 2012 iMac can utilize the sidecar feature... does anyone have insight with these two pieces of hardware talking to each other?

To my knowledge iMac late 2012 does not support Sidecar.
Found this from the Apple Website.
While your 2012 iMac is supported on macOS Catalina, Sidecar requires a 2015 iMac or later.

If your 2012 iMac can upgrade to macOS Catalina, it maybe able to run Sidecar.
