HomePods do not appear in the iPhone X Bluetooth devices list. The Home app seems to have no setting options for enabling Bluetooth for the HomePods... they seem to be "missing" a control panel for setting Bluetooth options... ?
If you can't pair your HomePod with your phone with Bluetooth and there's no other way to pair it; then I don't know what you need to do.
You might try Googling on how to pair or use a HomePod with an iPhone.
If your HomePod is Bluetooth enabled, you should see it on your phone's Bluetooth selections. Pair the HomePod with your phone.
9-to-5 Mac has video demos that explain... pairing is done using the Music widget in the iPhone's Control Center. There is no provision to pair with HomePod via Bluetooth... the audio stream is transmitted via WiFi. WiFi has no audio streaming protocol per se, so AirPlay is Apple's protocol via WiFi. AirPlay devices need to use a widget or audio source applet to connect. The AirPlay method is very simple, but often not obvious to users. The HomePod's WiFi connection has to be robust for any connection to work... mine have had spotty WiFi connections apparently... just based on their play-by-play commentary that plays on them, when they have a problem.
