how do I make a new backup that is not encrypted

I forgot/lost my encrypted password for my iPhone backup and want to make a new backup so that I can transfer everything from my current phone to my new phone. Is there anyway to do this? I don't want to use iCloud.

iPhone 7 Plus, iOS 13
