Stop Move Checked items to bottom of checklist
Move Checked items to bottom of checklist...can I stop this new ability in Notes
iPad or iPhone Notes app

This is not possible at this time.

Works fine on phone & iPad. How can this be changed on a Mac?

Settings -> Notes -> Sort Ticked Items -> Manually.
