Apple Watch backup

The last backup for my apple watch was about a year ago and from my previous apple watch. How do I force a backup of my current apple watch?

If you unpair your watch a backup is automatically made and when you re pair you are given the choice to set up as new or restore from the backup you made when you unpaired.
