Looks like no one’s replied in a while. To start the conversation again, simply ask a new question.

There is no music sync option on the music app for mobile devices.

How do I sync music because I DO NOT WANT TO USE ICLOUD. Is there something I have missed or are apple trying their hardest to make life unnecessarily difficult for everyone.

Beginning with macOS Catalina and the new Music app (formally iTunes), all syncing is done in the Finder. When you plug in your iPhone, check if it shows up in the Sidebar of an open Finder window. Click on it / Highlight it and you will see much of the same settings / options as you did when connecting your iPhone via iTunes.
