pages
Used to be I would choose a template in pages it would automatically input my name, address etc into the heading. How do I get that to happen now??

You create a new template in Pages that contains your explicit demographic information and save that. Start new documents with that template as needed. No Pages application since Pages '09 offers Mail/data merge from contacts into templates.
