how to control QuickTime playback speed?

Relatively new Mac user. My quicktime player is out of control.


Everything I read on how to control Quicktime playback speed indicates there's either an AV Controls menu under the windows menu if I press the option key or a menu becomes visible if I long press the Play button. None of these things work.


I'm using Catalina and QT 10.5.


My problem is that sometimes the playback speed jumps up to the point where the video just flashes by to the end as soon as I press play. So far the only solution seems to be a reboot, which is ridiculous.


I just can't imagine something so simple should be so complicated!
