Why? There's nothing to be gained by that.
If you remove the Apple ID from the iPhone, then the thief can just use the iPhone normally.
What you want to do, is lock the iPhone and erase it. This prevents the iPhone from being used, and even if it restored, it cannot be activated nor set up.
