Hello, Meteor306.

Welcome to Apple Support Communities.

From what I understand is that you want to delete Siri data in your iCloud. I got you covered on this. Just to be sure we're on the same page, are you deleting the iCloud Siri data following these steps? Settings > Your Apple ID > iCloud > Manage Storage > Siri > Disable & Delete? If you are following those steps you should get a pop up asking if you're sure about deleting the data. There is also a small message when turning this feature off:

"Turn off Siri in iCloud and delete what Siri has learned. This will not turn off Siri but learning will be limited to an individual devices".

Make sure to restart your iPhone as well. Sometimes a restart can help resolve issues.

If you're looking to remove all of the Siri data from the device, follow these steps: Settings > Siri & Search > Siri & Dictation History.

Keep me updated.

Cheers!
