If I have one set of Apple TV hardware, but have 2 TVs now, do I need to buy another set of hardware (console and remote) or will my one set work for both TVs in 2 different rooms?

Apple TV has one HDMI output for a video+audio signal. You could split that signal in theory, but the other screen would then get the exact same mirrored. You would need two set-top boxes for individual operation.

You would have to purchase another Apple TV to connect to the other TV.
