Numbers - Official Apple Support would be a good place to start.

If you have experience with Excel or a similar program you should pick it up fairly quickly. If not, thoroughly read through the help files, then start with the templates and absorb all you can by clicking on cells and seeing how formulas are set up to make those work.

You can get pretty far with the templates, but if you have a logical mind and are good at math, you can go much, much further with your own designs. Try it on your own first, and if you get stuck, we’re always here to help.

There are some excellent resources right in your menu.

A good place to start is Help > Numbers Help.

Also see Help > Formulas and Functions Help.

(If you are an experienced spreadsheet user coming over from, say, Excel you can also do an online search for a particular function; most, but not all, work the same in Numbers as they do in Excel or other spreadsheets.)

And be sure to study the templates at File > New in your menu. They contain many excellent examples of how to use Numbers, and several are far more sophisticated than they appear at first glance.

Also, if you like to refer to books you can try Take Control of Numbers. I don't have it, but have heard it is helpful.

And don't be intimidated. You do not need to be a math whiz to make good use of Numbers. Often the best approach is the simplest approach.
