Why does my iPhone 11 show an airplane icon in the upper right corner whenever I'm in an app? (I've definitely NOT put the phone in airplane mode.) It shows the regular cellular/wifi/battery icon when I go back to the home screen.

If I'm understanding correctly, you have noticed an icon appear in the upper right corner of your iPhone display when using apps. I will be glad to assist.
From what you are describing, it sounds like you might be seeing the Location Services icon which appears while
using some apps.
Please see the following:
Turn Location Services and GPS on or off on your iPhone, iPad, or iPod touch
