For context, if I create a word document that contains a hyperlink I know how to remove the hyperlink in word. However, when I convert the .doc to .pdf (using "save as" or "print as" PDF) the hyperlink is reborn in the PDF (the text is not blue, but the embedded information is. I know/ think this is an accessibility feature in Word, but I haven't been able to figure out how to disable it and/or remove the hyperlink in the PDF.

Not that easily I'm afraid. If you want more sophisticated editing of PDF, you'll need to use Adobe Acrobat Pro.
