I'm wondering how to update to the latest version of iOS 12 I'm running iOS 10 when I check for software update it says that my iPad is up to date

Do you happen to know what iPad model / generation you have?

Depending on the age of your iPad, iOS 10 might be the latest iOS version that is supported. For example, the latest iOS version supported on the 4th generation iPad is 10.3.3.
