YouTube also had videos of people microwaving their phones to charge them, claiming a software update made devices waterproof and claims that the Earth is flat.
Believing what YouTube videos claims is not very smart.

Bottom line? Apple does not recommend using AirPod Pros for this purpose. Do this at your own risk and don’t look for confirmation from your fellow users in these forums. And don't sue Apple if you do damage your hearing, okay?

Damage to your ears is cumulative and you don't always know it's happening. If you want to be deaf when you're in late middle age, by all means, don't bother with proper ear protection.
Also, why risk losing or damaging expensive headsets by using them for a purpose they weren't designed for? Seems foolish to me all round.
Why wouldn't it be able to be used?
I would not use them as ear protection to avoid hearing damage from the noise.
Get a pair of earplugs or headphones specifically designed for hearing protection.
