Can anyone please suggest any Canon or HP document scanners that are compatible with macOS 10.15 Catalina?
I'm not sure if I was clear enough in my earlier replies. You are not likely to find a scanner that indicates Catalina or any other macOS version because the sole requirement that must be met is AirPrint. It has been incorporated in every Mac operating system for nearly a decade, and is what the scanner needs to include.
Multifunction devices that include a scanner are often less expensive than dedicated scanners that do nothing else.

Apple's AirPrint discussion in that link is restricted to wired or wireless printing. Not scanning via AirPrint. Only a handful of USB attached MFP devices can print and scan without vendor drivers, and without a network connection, that would exclude AirPrint in that printing capability:
Thank you for your response.
I had no previous knowledge of AirPrint but will definitely look into this feature.
Hopefully it will help narrow down my search for a mid-priced Catalina compliant document scanner.
Thank you for your advice.
Unfortunately, to date, I have been unable to track down a Catalina compatible Canon or Epson document scanner.
My Xerox laser printer had no problems functioning after my installation of macOS 10.15 Catalina, so I am not in the market for a new printer.
You will probably find that most people have a multi function printer/scanner rather than separate devices for the average home use.
However, how about this for your current scanner?

Any AirPrint-enabled device will work: About AirPrint - Apple Support.
If you want specific recommendations I prefer Brother printers and multifunction devices. Avoid HP.
I have a Brother MFP printer with scanning capability. HP scanners should have compatible drivers but check first before buying a particular model.
If the scanner does not specifically indicate AirPrint, don't buy it.
Thank you for your suggestion but I have read some unfavourable comments regarding this software (such as security issues) and I prefer not to have to rely upon non-Apple software.
VueScan has been around for years and, FWIW, Apple does not make drivers for the many different printers or other hardware. Apple makes that available, but the developers still distribute it.
